Goat Cheese Toasts with Peaches and Smoked Honey
Sourdough bread sliced and lightly toasted, fresh goat cheese at room temperature, rosemary olive oil, sprinkle of sea salt, freshly cracked black pepper, sliced peaches, smoked honey for drizzling.
Spread the toast slices evenly with a thick layer of goat cheese, and layer sliced fruit on top. Drizzle toast freely with rosemary olive oil and smoked honey. Season with salt and pepper.
Ricotta cheese can be substituted for goat cheese. Any stone fruit can be substituted for peaches.
Smokey Sweet Tea
Bring 4 cups of water to a near boil.
Add one family size tea bag (green or black) and cover the pan. Remove from heat and let steep for 15 minutes.
Remove tea bag, pour into a pitcher, add 1/3 cup smoked honey and stir.
Add 4 cups of cold water and place in the fridge.
Smokey Golden Elixir
2 ounces bourbon
3/4 ounce freshly squeezed juice from 1 lemon
3/4 ounce smoked honey syrup (To make honey syrup, combine 1 cup water with 1 cup honey in a small saucepan and heat over medium heat, stirring constantly, until honey is dissolved. Cool before using.)
Combine all ingredients in an ice-filled shaker. Shake until well chilled. Strain into an ice-filled double old fashioned glass.
